Makes 4 large main-dish salads or 6 side salads
2 Jabal plain or garlic pita pockets, cut into strips , then toast and crumbled
1 tsp chopped garlic
1 tsp salt
1/2 cup fresh squeezed lemon juice
1 tsp powdered Sumac
1/2 cup extra virgin olive oil
2 heads Romaine lettuce, chopped
1/2 cup thickly sliced green onion
1 cup diced tomatoes
1 cup diced cucumber
1/2 cup coarsely chopped fresh mint leaves
1/2 cup coarsely chopped flat-leaf parsley
Preheat oven to 200c. While oven heats, mash together the chopped garlic and salt to make into a paste. Add the lemon juice and 1 tsp Sumac. Whisk in olive oil and set dressing aside.
cut plain or garlic pita into strips and put on baking tray. Bake the pita strips until crisp (200c, approx ten minutes)
combine all ingredients and sprinkle toasted chips onto salad. This is a great 'prepare in advance' meal that will dazzle your guests or family.
